Vanilla Coconut Kefir

Kefir is a fermented drink that’s filled with good bacteria to support healthy digestion and immunity. This version, made with coconut milk, is a great dairy free alternative to traditional kefir or yogurt. It is SUPER easy to make and it tastes so darn good.  I have a hard time getting my kids to eat fermented foods but they love the the coconut kefir! It’s great way to sneak extra probiotics into their diet. Have fun with it. You can add it to smoothies, oatmeal, cereal or soups.  We love to make homemade popsicles… right now coconut kefir and mango popsicles are a house favorite.

Ingredients:

1 can of coconut milk

2 tsp high potency, dairy-free probiotic powder (my favorite brand is Pharmax)

2 Tbsp honey

1 tsp vanilla extract

Mix it up:

Combine all ingredients together in a pint size mason jar.  Mix well and put the lid on.  Place in the oven and turn the oven light on. Do not turn the oven on! The oven light is just enough heat for the job. Let your kefir sit in the oven for 24 hours. Open it up and give it a good stir. Store in the fridge.  It will keep for a few weeks, but I am sure you will devour it before then! You can enjoy it strait as a creamy beverage. Or you can add it to smoothies, oatmeal, cereal, soups, etc.

    Hi Faith,
    I was wondering if you could use water kefir grains with this as your probiotic powder? Or would adding a mini bottle of Bio-K fermented rice do the trick?
    The recipe sounds delicious! Can’t wait to try it out.

      Hi Amy, The Bio-K would definitely work! I am not sure about the water kefir grains. If you try it, let us know how it turn out 🙂
